Russian snowball cookies recipe. What can represent Christmas better other than Russian snowball cookies or many people know them by tea cakes name. Both recipes are similar and ingrediets might vary slighltly, but the end result is simply delicious.
Russian snowball cookies is a relatively simple recipe which requires very few ingredients. Usually, the pastry can be frozen for up to 4 weeks and used whenever you plan to bake a few cookies for the weekend or for a special occasion.
While Russian snowball cookies recipe is buttery, ( the reason of which they are soft and melt in your mouth), you can try this recipe with vegan butter and the outcome will be exactly the same.
As the name suggests, snowball cookies are specific for festive season, at Christmas and New Year, along with a cup of tea or coffee.
Russian snowball cookies are very similar to European Christmas cookies.
These little white cookies remind me of my childhood when we gathered a group of kids and started to sing carols at every house from my neighbourhood, which in exchange the guests were serving us with different kind of white cookie, a glass of juice and money.
Little did I know that these snowball cookies would become nowadays so popular and luxurious. Without exaggerating they look similar to Raffaello chocolate, except that Russian snowball cookies are healthier.

Ingredients
From these ingredients you will come up with around 50 cookies.
- 225g unsalted butter
- 1 teaspoon vanilla extract
- 50g sugar powder
- 250g plain flour
- 110g walnuts, very finely chopped
- plain sugar or vanilla sugar powder for decoration
- 1/2 tsp fine salt
- 1/2 Tbsp orange zest
- coconut powder for decoration
How to make Russian snowball cakes recipe
Preheat oven to 180 C / Gas 4 and place parchment paper in the oven tray.
In a medium bowl, we add the butter and we mashed it with a spoon, then we add the vanilla extract, salt, orange zest and sugar while using the mixer to combine the ingredients. Gradually add the flour and finely chopped walnuts and mix until everything is blended properly.
Once all ingredients are mixed, you should come up with a soft paste that is not too sticky or too soft.

The next step is to use an ice cream scoop or a tea spoon to separate equal parts of the dough. Place each one of them in the palm and roll it until it becomes beautiful rounded shape.
Every time you make one, place it in the oven tray and leave 3 cm distance between each one. Once you fill the oven tray with dough balls, bake for 11-12 min.
Remove the snowballs cookies from the oven tray and allow to cool for 5 minutes. Meanwhile, mix vanilla sugar with coconut powder in a bowl and roll the cookies until they become fully white.
Allow to set for another 15 minutes and then repeat the process with coconut and vanilla sugar.
