  • Olive oil                      (2 teaspoons)
  • Whisked eggs              (6)
  • Diced red onions         (1/2 cup)
  • Cotija cheese  
  • Diced Avocado           (1/2)
  • Mince garlic                (1 clove)
  • Cherry tomatoes          (1 handful)
  • Salt
  • Pepper
  • Sliced Jalapeno           (1)

How to prepare Mexican omelette:

Pour the oil in a saute pan place over medium-high heat. Add the onions and jalapeno and allow it to fry for three minutes. Add the cherry tomatoes and continue cooking for another three minutes. Add a pinch of salt and pepper to taste. Afterwards, transfer it to a plate.

Place the saute pan back on the heat and set it to medium. Pour the whisked eggs and cook for three minutes. Remove the pan from heat and add the onion mixture, cotija seeds, avocado, and cilantro. Fold over to form omelette and garnish with cilantro. Serve warm.

Add oil or butter to another pan, heat it, pour the egg mix and ensure it spreads evenly. Add the onions and top it with cheese. Fold the egg and serve when it is set.

Preheat your oven to 350°. Wash, slice, and boil the potatoes until it is tender. Cut the sausage into small pieces, place it in a skillet, and add onions. Cook for a few minutes and add the boiled potatoes and onions. Beat the eggs in a bowl, add salt, thyme, and pepper to taste. Pour the mixture slowly over the potato mixture and bake for twenty minutes. It is best served hot.

  • Milk                             (2 tablespoon)

  • Cooked bacon             (4 slices)
  • Cherry tomatoes          (1/4 cup)
  • Salt
  • Pepper

How to make bacon omelette:

Preheat your oven to 450°. Cut bacon into smaller slices and cook until it is crispy. Remove the bacon from the pan, but leave the grease in it. Slice the tomatoes and chop the spinach. Mix the eggs, and add salt and pepper to taste. Heat the grease, once hot, add the egg mixture.

Cook the mixture over medium/heat for two minutes. Add the chopped spinach, bacon, cheese, and cherry tomatoes. Place the pan in an oven and allow it to cook for one to two minutes. Remove from oven, add any toppings of your choice and serve.

Garlic Mushroom Omelette

Garlic mushroom omelette is a perfect simple omelette recipe for breakfast. You can prepare this delicious breakfast omelette recipe in just thirty minutes. Garlic mushroom omelette is your best option if you want to treat yourself with a good meal and don’t mind spending half an hour in the kitchen.


  • Eggs                            (3)
  • Chopped onions          (2)
  • Sliced mushrooms       (150g)
  • Cheddar                      (50g)
  • Rocket                         (1 handful)
  • Crushed garlic             (1 clove)
  • Chopped red chilli       (1)
  • Butter

How to make garlic mushroom omelette:

Add a knob of butter on a heated pan, then chopped mushrooms and cook until it is soft and golden. One by one add the onions, garlic, red chilli pepper, and let it cook gently for three minutes. Season the mixture, tip it onto a separate plate, and cover it.

Wipe the pan, add another knob of butter, and heat it. Beat the eggs, add salt and pepper to taste, and pour it in the pan. Cook it gently and draw in the sides.

Sprinkle cheese and the mushroom mix when the omelette is almost set. Leave on the heat until the cheese starts to melt, then incorporate the rocket and fold. Slide garlic mushroom omelette onto a plate, and you are good to go.
