Pour the oil in a saute pan place over medium-high heat. Add the onions and jalapeno and allow it to fry for three minutes. Add the cherry tomatoes and continue cooking for another three minutes. Add a pinch of salt and pepper to taste. Afterwards, transfer it to a plate.

Wipe the pan, add another knob of butter, and heat it. Beat the eggs, add salt and pepper to taste, and pour it in the pan. Cook it gently and draw in the sides.
Sprinkle cheese and the mushroom mix when the omelette is almost set. Leave on the heat until the cheese starts to melt, then incorporate the rocket and fold. Slide garlic mushroom omelette onto a plate, and you are good to go.
