Ingredients
- 1 pack of Lindt dark chocolate (you can use only dark or mix it with white chocolate)
- 120g kataifi pastry
- Pistachio paste
Optional extras: Edible gold flakes, chopped nuts, or seeds for a fancy touch.
Instructions:
1. Prepare Your Mould
Start by prepping your chocolate mould. Make sure it’s clean and dry. If you want to add a luxurious twist, sprinkle a few edible gold flakes or gold powder into the mould. You can spread these evenly or focus on specific parts for a unique design.
2. Melt the Chocolate
Break the chocolate into small pieces and melt it using a bain-marie (a heatproof bowl set over a pot of simmering water).
Start with the white chocolate if you’re using both types. Once melted, pour two tablespoons of white chocolate into the mould and spread it evenly to cover the base.
3. Prepare the Kataifi Mixture
While the chocolate sets, chop the kataifi pastry into small pieces. Add it to a hot pan and fry until it turns golden brown. Stir occasionally to prevent burning.
Transfer the fried kataifi pastry to a bowl and mix in 3 tablespoons of pistachio paste until well combined. This mixture will form the crunchy, nutty filling of your Dubai chocolate.
4. Layer the Chocolate
Now, melt your dark chocolate using the same bain-marie method. Once melted, spoon it over the white chocolate layer in the mould, creating a thick, even coat. Be sure to cover the sides as well to form a solid shell. Place the mould in the fridge for about 15 minutes to let it set.
5. Add the Filling
Take the mould out of the fridge and spoon the pistachio-kataifi mixture into the mould, spreading it gently to cover the entire chocolate layer. Be careful not to overfill, as you need space for one final layer of dark chocolate.
6. Seal with Chocolate
Finish by spooning the remaining melted dark chocolate over the filling. Use a knife or a spatula to smooth the surface for a neat finish.
7. Personalize Your Chocolate
Feel free to get creative here! Sprinkle chopped nuts, seeds, or even add a touch of green edible colorant to the pistachio paste for an extra pop of color. This step is optional, but it adds a unique flair.
8. Chill and Enjoy
Let the chocolate set in the fridge for at least 15 more minutes. Once firm, carefully pop the chocolates out of the mould, and it’s ready to enjoy!
Tips:
- If you don’t have a bain-marie, you can melt the chocolate in the microwave in short bursts, stirring frequently. It depends on the chocolate type. Some chocolate brands get harder in the microwave, so is best to stick with the bain-marie method
- For a gourmet touch, you can experiment with different types of nuts, dried fruits, or even a dash of sea salt. These can be added to the pistachio and kataifi pastry filling
